What Is the Life Expectancy of Rhubarb?
Before we get into storage methods and timeframes, I’d want to point out that any leaves should be trimmed and discarded before storing ([ILL]). Just in case your rhubarb arrived with leaves attached and you haven’t yet removed them.
Allowing your stalks to rest on the counter or in the pantry for a number of days (say 2 to 4 days) is OK if you just need them for a couple of days.
They’ll begin to dry out, but the alterations won’t be significant. Especially if the vegetable is going to be used in a pie. Consider placing the rhubarb in the fridge after you get home if you want to eat it raw.
Refrigerate rhubarb if you want to store it for a longer period of time.
Putting it in a plastic bag is one method of doing so ([PSU]). The vegetable should keep its quality for around two weeks if done this manner. Puncture some holes in the bag to allow the ethylene gas (which causes fruits and vegetables to mature) to escape and prevent your rhubarb from becoming overripe.

If you need a little extra, wrap the rhubarb stalks loosely in aluminum foil (without crimping the ends) and store it for up to three weeks ([CI]). This helps to keep the stalks wet while also allowing the gas to escape.
It’s the same with mangos, papayas, and a variety of other fruits and vegetables: you need ethylene to ripen the product, and then you let it out so it doesn’t become overripe too soon.
Wrapping the stems with a moist towel is another approach to prolong the life of rhubarb. They won’t dry up as quickly this way. The only drawback is that to keep things wet, you must dampen the towel every couple of days.

Is Rhubarb Freezable?
If that two to three weeks aren’t long enough for you, freezing is an option. Both fresh and in a dish (Pie with rhubarb! ), the vegetable stores nicely.
Rhubarb that has been frozen and thawed is best used in cooked (soups, stews) and baked (pies) dishes.
If you want to freeze the pie, just place it in an airtight container or freezer bag, seal it well, and place it in the freezer.

If you want to freeze fresh rhubarb, you’ll need a little more time. This is how you can do it ([PSU]):
- Wash, cut, and trim your hair. Basically, prepare the rhubarb as if you were planning to use it in a later dish. Before continuing, make sure the rhubarb is completely dry.
- Pack. Fill freezer-safe containers or bags with the cut rhubarb. There should be enough for each of them to utilize in a future dish. Because the parts will stay together when frozen, packaging them this manner prevents it from happening later. After defrosting the whole container, you’re ready to go.
- Freeze. You’re done when you put the container or bags in the freezer.
As you can see, the operation is rather straightforward and takes around 10 minutes, depending on the amount of stalks you have.
This method of freezing rhubarb should retain its quality for at least a couple of months.

What Is The Best Way To Tell If Rhubarb Is Bad?
It’s hardly rocket science to figure out whether your rhubarb is rotten or not. If yours is off, you’ll probably notice it immediately away when you see it. If you’re not sure what to look for, here’s a list to help:
- Texture. Rhubarb is firm when it’s fresh. If yours is soft or limp, and it doesn’t keep its form when you grip one of the ends, throw it away.
- Color. Rhubarb is a ruby-red plant with occasional pale green areas. If the stalk’s skin darkens and becomes brown or black, it’s clear that it’s beyond its prime.
- Mold. Mold may develop on both ends of the stalk, particularly if it is left at room temperature for long periods of time. You may snip them off and enjoy the rest as long as they’re little. However, if the mold begins to spread, remove the rhubarb.
- Smell. I’ve never had a bad-smelling rhubarb, but if yours does, something is wrong. If this is the case, it should be discarded.

- Wrap it in aluminum foil without crimping the ends to extend the storage duration to up to three weeks.
