As many of you know, I have kids who are in the 4th and 5th grade. However, they go to a school where they don’t have a cafeteria. So, they get a free lunch everyday. This means they have to bring it from home or a restaurant. My oldest daughter eats a lot of chicken nuggets, pizza, and breakfast sandwiches. So, if I want her to slim down, I need to come up with a healthy alternative for her. I came up with the turtle bars.
I am a big fan of Raisinets, they are one of my favorite snacks. When I first saw them on the shelf of my local supermarket, I was surprised at how cheap they are, so I bought a package to taste test.
I’m not a big fan of the sugar-free baked goods, they honestly taste like cardboard to me, but I like to make my own healthy treat and I’m working on a recipe for it. I decided to make these bars and see if they were any good and they were! So I thought that I would share them with you and I hope that you enjoy these.
Turtle bars are a delicious treat that are chewy, gooey, and filled with chocolate and handmade caramel. They’re great for the holidays or any time of year! Each mouthful is made even better by a coating of delicious chocolate swirled caramel and crunchy almonds on top of soft shortbread. Turtle Bars: How to Make Them
Are you ready to create some turtle bars? Here’s what you should do. Preheat the oven to 350 degrees Fahrenheit. Combine the flour and sugar in a mixing bowl, then cut in the butter until the mixture is coarse and crumbly. Bake for 15 minutes after pressing the flour mixture onto a baking sheet fitted with parchment paper.
Melt the butter and sugar in a saucepan over medium heat while the shortbread bakes. Allow the mixture to come to a boil for 1 to 2 minutes, stirring continuously. Remove the caramel from the heat and pour it over the shortbread. Sprinkle a handful of nuts (hazelnuts, pistachios, pecans – anything you want!) over the caramel and bake the turtle bars for 13 to 15 minutes, or until the caramel begins to bubble.
Remove the baking sheet from the oven and liberally sprinkle it with chocolate chips. Allow for 3 to 5 minutes before swirling the chocolate and caramel with a knife. Allow the bars to cool fully before cutting into squares.

Refrigerate the turtle bars for 30 minutes before slicing to make them easier to cut.
When a toothpick inserted into the center of the shortbread base for your turtle bars comes out mostly clean, it’s done (a few crumbs are okay). To prevent overbaking the shortbread, use this technique.
Variations on Turtle Bars to Try
There’s a lot you can do to make your turtle bars more interesting. As the caramel is setting, add some dried fruit (cranberries, chopped dry cherries, and raisins are all wonderful), crumbled vanilla wafer cookies, oats, or butterscotch chips. For an even sweeter treat, drizzle a bit more chocolate or caramel over the tops of the bars.

Keep your turtle bars at room temperature for up to 5 days in an airtight container.
Is it possible to freeze Turtle Bars?
Absolutely! Freeze for up to 3 months for long-term storage. Place a piece of parchment paper between each layer of the turtle bars to make them easier to separate.
